In this hands-on class, you will learn to prepare two French pastry classics: Saint Honoré and Croquembouche.
You’ll discover how to master pâte à choux, pastry cream, and caramel to create refined and professional desserts

How to prepare the perfect pâte à choux.
• How to make professional pastry cream.
• How to build and assemble the Saint Honoré base.
• How to cook and handle golden caramel for decoration.
• How to construct a Croquembouche safely and beautifully.
• Basic principles of pricing, presentation, and commercialization
